low calorie / high fiber

marshmallow drawing by j.i. kleinberg…drinking coffee, I think about the sweet, white mouth feel of marshmallow. Pure confection, powdery surface, melting on the tongue. The sound of tiny bubbles squeaking between your teeth as you bite into it. The gooey stickiness of the inside. The taffy-pull threadiness of it stretched between your fingers. Neat golden mounds melded into a casserole-topping continent. Little white island surrounded by sugary foam in a cup of hot chocolate. Perfect bubbling melty-smoky treat on a stick yanked from the campfire just in time. Toasted and chocolaty ooze smushed between graham crackers… mmmmmarshmallow…

For years I sold my baskets and crocheted edibles at street fairs. One summer I had a booth at an art fair in San Francisco, on the tree-lined plaza in front of City Hall. The baskets were filled with colorful (real) fruits and vegetables — apples and eggplant, red onions and russet potatoes. Near the front of the table was a plate of crocheted cookies.

Before I quite knew what I was seeing, a large dog on a leash strolled by the booth ahead of his man, turned his head slightly and delicately took one of my crocheted Oreo cookies between his lips, walking on without breaking stride. The man and I noticed the theft at the same time. He paid for the cookie, but I always considered it the best testimonial for the cookies’ “authenticity.”
